Answer: Ruby Tuesday. Founded in Knoxville in 1972 by UT student Sandy Beall, the name from The Rolling Stones’ 1967 song Ruby Tuesday was a suggestion by one of Beall’s several fraternity brothers who were co-investors. Today the restaurant chain is headquartered in nearby Marysville.
